Mirandela

Separador

The Alheira de Mirandela, which absorbs this name associated with the place of sale and shipment, the city of Mirandela, is the most consumed and known regional sausage in the country.

The smoked meats from Trás-os-Montes – stuffed in tripe or just salted and smoked – when not used for feijoadas and other stews or as main dish, was also served as a starter to the best festive or Sunday mealtimes. The vegetable garden and the hill, the pasture and the cultivated field, the pantry and the cork, the kitchen fireplace, and the pleasure of the table, are always present in the flavours of this delicacy. Consumed after roasting over a soft coal or after fried in a little oil and in the fat that it releases, its function is to serve as an appetizer for what follows.
