The fried almond, also known as caramelized almond, is made with almonds (with skin) from Freixo de Espada à Cinta, sugar and cinnamon. In a pan over low heat place 2 part almond, 1 part water, 1 part sugar and cinamon. Keep on the heat until the sugar melts and continue until you feel the almond crackles and the sugar reaches a caramel point. Remove from the heat and spread very quickly before the caramel hardens.

From Spanish influence, the fried almonds are made in a process in which the "secret" is always the caramel point. The fried almonds are prepared exclusively with Almonds from Freixo de Espada à Cinta and its origin is lost in time.
